Abstract

Throughout the 90s of the twentieth century in Europe there is an increasing flow of legislation on animal health, which reflects an unprecedented concern for these issues. The implementation of this growing “legislation on prevention and risk”, generates an undesirable effect where it is applied: a “cultural sanitation” which more expressive forms are the “immobilization” of infected flocks and the “sacrifice” of entire herds of cows. Two ethnographic examples, taken from two valleys of the autonomous community of Cantabria –northern Spain–, place the
reader in some of the cultural effects of the current livestock sanitation.
